Prosecco Superiore di Cartizze DOCG “Arzanà” of Astoria Vini winery is produced exclusively from grapes of the prized vineyards in Cartizze, micro-area Cru of Valdobbiadene. The harvest by hand takes place in September/October with selected grapes considering their chemical/organoleptic properties, and are lightly pressing and settling of the must. The primary fermentation takes place in steel tanks at 18-19 °C with selected yeasts sugar residue and, after having made it clear, once transferred to an autoclave for second fermentation. Its duration is of 20-25 days which is followed by a period of about 10 days on the yeasts. Once bottled, it is left to rest for 4-6 weeks.
Prosecco Cartizze Arzanà is characterized by intense and rich aromas, fruity flavors, full and harmonious taste. The perlage is very fine-grained, continuous. Straw-yellow color, shiny, it expresses on the nose intense, fragrant, rich in fruit and delicate floral notes. At the contract it is full, fruity, harmonious, unique.
