An outstanding Premier Cru Chablis from one of the region’s most traditional estates, this 2015 “Les Lys” is crafted exclusively from Chardonnay grown on Kimmeridgian limestone soils. Produced by Domaine Daniel-Etienne Defaix, a family estate with centuries of history, the wine is aged extensively on fine lees before release, resulting in remarkable depth and maturity.
In the glass, it shows a rich golden hue. The nose is complex and expressive, with aromas of ripe lemon, baked apple, acacia, honey, and toasted brioche, layered over a distinct mineral backbone. On the palate, it is full and textured, balancing creamy richness with vibrant acidity and a signature Chablis chalky freshness. The finish is long, elegant, and saline.
A beautifully evolved white Burgundy with both power and finesse, ready to drink now but capable of further aging.
