A benchmark Premier Cru Chablis from one of the region’s most historic estates, this 2014 “Vaillon” is a masterclass in long-aged Chardonnay. Produced by Domaine Daniel-Etienne Defaix, the wine is matured extensively on its lees and released only after many years, delivering exceptional depth, texture, and complexity.
In the glass, it shows a deep golden hue. The nose is layered and refined, with aromas of citrus peel, green apple, peach, and dried white flowers, complemented by notes of honey, brioche, and subtle spice. On the palate, it is rich yet precise, combining a creamy, satiny texture with vibrant acidity and a pronounced mineral backbone. The finish is long, fresh, and elegantly saline.
Sourced from southeast-facing Premier Cru vineyards on Kimmeridgian limestone soils, this wine reflects both optimal ripeness and classic Chablis tension. The 2014 vintage is particularly noted for its freshness, structure, and aging potential.
