Production methods: The grapes are harvested and sorted by hand, placed in plastic crates of 25kg. Direct pressing without maceration, classic white vinification with classical static sedimentation. The fermentation is done in stainless steel tanks of 100hL with controlled ranging from 13˚C to 16˚C and lasts 10 – 16 days. Oxygen management under strict control. Malolactic fermentation in tank and ageing in oak barrels.
Annual production: 10.000 L
Ageing: French (50%) and American (50%) used oak barrels, for a period of 4-6 months.
Color: Golden straw color.
Aromas: Ripe pear and citrus aromas, completed by seductive coffee-caramel essence. Taste: Long, beautifully structured finish with zestful minerality.
Winemaker’s note: Golden straw color, flamboyant, vibrant and complex and medium-bodied palate.
Food pairing: To be served with fish, pasta or white meat.
Serving: We recommend it at a temperature of 8-10°C
