Production methods: The grapes are harvested and sorted by hand, placed in plastic crates of 25kg. Fermentation in 400 hl thermoregulated fermentors with remontages and delestages, one part (50%) ageing in oak barrels for 7 months. Oxygen management under strict control.
Annual production: 10.000 L
Ageing: French oak barrels for a period of 7 months for one part and stainless steel tank for the other part of the wine.
Color: Medium, bright ruby.
Aromas: Red berries, vanilla and slightly oaky.
Taste: Structured palate, smooth texture, fine grip.
Winemaker’s note: Complex, medium-full body, varietal aroma with red cherries, caramel,well-balanced.
Alcohol by vol.: 12.98%
Food pairing: To be served with fish, light cheese, rabbit meat, mushrooms.
Serving: We recommend it at a temperature of 14 – 16°C.
